Shakshuka

SHAKSHUKA

approx. 30 minutes – Serves 2 people

The word shakshuka comes from Arabic, meaning, “a haphazard mixture” or “all mixed up”.

@thepaleopeach brings to us her own version of this fun dish!

¡Shakshukaaaaa!

INGREDENTS:
  • 4 eggs
  • 1 onion
  • 1 red pepper
  • Handful cherry tomatoes (optional)
  • Tin tomatoes
  • 50g feta cheese
  • 2 tsp paprika
  • 2 tsp cumin
  • Fresh parsley (or any herb you like)

And our own addition from The Wine Embassy (A bottle of Red For Tapas Organic)

INSTRUCTIONS:
  1. Chop the pepper and onion and fry in a little olive oil.
  2. Add the cherry toms and simmer.
  3. Add cumin and paprika and fry for 2 mins before adding tin tomatoes.
  4. Allow to simmer until well mixed.
  5. Make small wells and crack the eggs in, bake in oven for around 10 mins.
  6. Crumble feta and chopped parsley on top!
